Shrimp and Scallops Ceviche





Hi everyone,  I hope you are having a great day. Today we are having a beautiful first day of Spring. The sun is shining bright and it is about 75 degrees outside. It is an incredible day. So we decided to make a perfect outdoor spring meal.  (It is actually great any time.)  If you like shrimp,  you will love this meal.  It is called ceviche.  It is one of my husbands favorites!  It is also his specialty.  We love making this dish.  We used 2 lbs. of shrimp, 1 lb. of scallops, 3 tomatos, 2 onions, 1 bunch of cilantro, 6 limes, and a splash of olive oil.  Salt to your taste. Mix it all up together and let it chill for about an hour in the fridge. (You can also use tuna instead of shrimp.)  Serve it on tostadas and add your favorite hot sauce if you like it spicy or ketchup if you prefer a sweeter taste.  This will feed my family of seven, so if you don't need as much just use less ingredients. :):):)
